Today’s the day. It’s 6am and I’m sitting in Dublin airport terminal 2, gate 16 waiting for my final adventure, the flight home. These last three months have been nothing short of incredible. The people I have met and worked with, the places I have seen and the food I have cooked. I am beyond thankful that I got to participate in this exchange and think that it was an amazing choice. This was a rare opportunity and one that I will never forget. I learned new skills and made connections with chefs from half way around the world. Soon life will return to what it was. “Spuds” will be called potatoes, no one will say “lads”, and I wont see a farm every time I get in a car, but still I will always remember the beauty that is Ireland and hopefully sometime soon I will return.
Today as a final goodbye Chef Mathias wanted us to do an American menu. I did a warm beat and spinach salad with bacon, balsamic and a beet juice reduction with toasted goat cheese croutons. For a main I did southern style spear ribs with
a sweet potato puree and sweet southern corn bread. And finally for dessert I did a New York style cheesecake with a blueberry compote. Terra did a variety of Mexican influenced dishes. The entire class helped us prep and produce the menu throughout the service. Everything went great and without a hitch. They have never seen many of the things like the ribs or the cornbread and they were especially surprised with the cheesecake. Usually in Ireland they don’t bake their cheesecakes, they just add gelatin so they loved the baked dish. This was also the last day of classes for us. It was a rather sad goodbye to all our fellow classmates and to the great chefs we have been working with. Thankfully they all have facebook’s so we can stay in pretty well contact. That night we went to chef Tony Barry’s house for a farewell dinner. It was very nice, a roasted rack of lamb with roasted vegetables. We had become very close to Tony over the last three months and he had looked after us so it was a very good, good bye. Then Saturday we went to Mathias’s for a last dinner. It was so nice, we got pretty close with his family and it was great to say goodbye.
